My son helped craft the butter this morning, infusing it with love and warmth. Let's dive into this wholesome recipe that's perfect for any occasion!
Muffin Batter Ingredients:
- 2 cups oat milk
- 4 tablespoons flax meal
- 1 teaspoon vanilla extract
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 4 cups oat flour
- 2 tablespoons cinnamon
- 3 teaspoons baking powder
- 2 teaspoons baking soda
- 4 pinches salt
Instructions for Batter:
1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
2. In a large mixing bowl, combine oat milk, flax meal, vanilla extract, olive oil, and maple syrup. Let it sit for 5 minutes to allow the flax meal to thicken the mixture.
3. In another bowl, whisk together oat flour, cinnamon, baking powder, baking soda, and salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to over mix.
5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
6. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.

Cinnamon-Maple Butter:
- About 1/4 - 1.5 c vegan butter, softened
- 1 tablespoon maple syrup
- 1/2 teaspoon ground cinnamon
Instructions for Butter:
1. In a small bowl, mix together softened dairy-free butter, maple syrup, and ground cinnamon until well combined.
2. Adjust the sweetness or cinnamon to taste.
Serve alongside warm oat muffins for a burst of flavor and indulgence.
Homemade Oat Flour:
Blend 4 cups (or more to store for next use) of GF rolled oats in a food processor until
you've reached the consistency of fine sand. Simply simple, right?!
