I've had the privilege of being embraced by the warmth of Turkish hospitality through dear friends of mine. Inspired by their rich culinary traditions, I'm excited to share one of my many favorites that captures the essence of our shared moments.

  • 6 ounces of tomato paste

  • 3/4-1 cup of olive oil

  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat.

  2. Add the diced onions and minced garlic to the skillet and sauté until they become translucent and fragrant.

  3. Add the tomato paste and lemon to the skillet and cook for an additional minute or so, stirring to combine it with the onions and garlic.

  4. Add the green beans to the skillet and toss them with the onion, garlic, and tomato paste mixture.

  5. Cover the skillet and cook the green beans over medium-low heat until they are tender and lose their bright color.

  6. Season the green beans with salt and pepper to taste.

  7. Remove the skillet from the heat and let the flavors meld together for a few minutes before serving over a plate of basmati rice.
