Directions
1. Sauté the chopped onions, minced garlic, sliced celery, sliced carrots, and ginger in about 2 tablespoons of olive oil. Here is where you add the turmeric if you are using. I had completely forgot to add this the first time around. Once sautéed, remove from the pot.
2. Brown the chicken breasts in the same pot.
3. Add the halved celery, onion, and carrot to the pot with the browned chicken to make a homemade broth. Utilize the bone-in chicken to enhance the flavor of the broth.
4. Allow the broth to boil for about 30 minutes, then reduce the heat to simmer for an additional 30 minutes.
5. Add the sautéed veggies into the simmering broth.
6. Meanwhile, cook your pasta following the instructions on the package. You can either add the cooked pasta directly into the pot or keep it separate and add it to individual serving bowls.

• 2 Bone-in chicken breasts
• 2 onions (1 chopped, 1 halved)
• 4-6 cloves of garlic, minced
• 1-2 inches of ginger
• 3 stalks of celery (2 sliced, 1 halved)
• 4 medium carrots (3 sliced, 1 halved)
• Optional: 1 tablespoon of turmeric
• Bag of gluten-free fusili pasta or any GF pasta you desire
• Olive oil
• Salt
• Pepper
