Mushroom “Meat” Spaghetti Sauce for a Rainy Day There’s nothing quite like a hearty, comforting meal on a rainy day. Today, I’m sharing a recipe for a delicious mushroom “meat” spaghetti sauce that’s perfect for this kind of weather. Made with portabella mushrooms and a blend of Italian seasonings, this sauce is both rich and flavorful.

Ingredients:

• 4 large portabella mushrooms, finely chopped

• 2 tablespoons olive oil

• 1 onion, finely diced

• 3 cloves garlic, minced

• 1 can (15 oz) tomato sauce

• 1 can (6 oz) tomato paste

• 1 tablespoon Italian seasoning blend

• Salt and pepper to take

• Fresh basil or parsley for garnish (optional)

Instructions:

1. Prep the Mushrooms: Start by cleaning the portabella mushrooms. Remove the stems and finely chop the caps. The mushrooms will serve as the “meat” in your sauce, providing a hearty texture.

2. Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

3. Cook the Mushrooms: Add the chopped portabella mushrooms to the skillet. Cook until the mushrooms release their moisture and begin to brown, about 7-10 minutes. This step is crucial to give the sauce a deep, umami flavor.

4. Add the Tomato Components: Stir in the tomato sauce and tomato paste, mixing well to combine. The tomato paste will thicken the sauce, giving it a rich consistency.

5. Season the Sauce: Sprinkle in the Italian seasoning blend, stirring to ensure it’s evenly distributed. Add salt and pepper to taste. Let the sauce simmer on low heat for about 15-20 minutes, allowing the flavors to meld together.

6. Serve: Cook your favorite pasta according to package instructions. Serve the mushroom “meat” sauce over the pasta, garnishing with fresh basil or parsley if desired.

Tips:

• For Extra Flavor: Add a splash of red wine to the sauce while it simmers.

• Make it Spicy: Incorporate a pinch (or more) of red pepper flakes for a bit of heat.
